Healthy Banana Pancakes

Description

Easy to make, super healthy recipe for breakfast, snack or even dessert. Gluten and dairy free.

Ingredients

  • 1 large ripe banana
  • 2 eggs

Instructions

  1. Mash the large ripe banana with a fork or masher (if you have one).
  2. In a medium size bowl, mix the eggs and then add the mashed banana. Mix everything together well.
  3. Put a little bit of oil in a pan, (I recommend coconut oil, about 1/4 teaspoon) on medium/high heat. When hot, pour a small amount of mixture (I recommend making small pancakes so they are easy to flip).
  4. When the pancake starts to rise slightly (usually about 1-2 minutes) , flip it over and cook the other side.
  5. Ready.
