Low in calories and high in nutrition, lentils are the perfect legume to eat as an item on a dinner plate. Lentils are also great for babies starting on solids! My son started eating puree lentils at around 9-10 months old.

The Centers for Disease Control and Prevention reports that eating plenty of nutrient-dense foods like lentils can lessen your risk of many serious medical problems. Lentils are not only one of the oldest commonly consumed legumes in history, but they are also one of the simplest to prepare since they don’t require soaking time like other beans.
Ingredients for Lentils with Baby Carrots:
2 cups lentils
4 cups vegetable broth (you can use any type of broth or water)
1 cup baby carrots (try different veggies: squash, sweet potato)
Salt to taste
Olive oil or coconut oil
Instructions:
Bring broth to a boil and add the lentils, salt, and a little oil (about 1-2 tspns). Lower to medium heat and cook for about 30-40 minutes. Add the baby carrots if you want them really soft if not just put 10-15 minutes before lentils are done. If you are feeding a baby starting on solids you can just blend it.
*I like to add more spices like turmeric, and a little peppper. Sometimes I sautee 1/2 an onion with a couple of garlic cloves first before adding the broth.
