A delicious homemade dinner recipe that is good for the entire the family.
2 cups rice
1 pound medium size shrimp
1 onion finely chopped
1 red pepper chopped
1 green pepper chopped
3 garlic cloves
2 tbsp turmeric
1 tsp paprika
2 1/2 cups Clamato Tomato Cocktail
1 cup chicken broth
Salt, pepper and cooking oil
In a large skillet sauté onions with cooking oil (the one you normally use at home), garlic, salt and pepper. Cook for about 5 mins.
Then add green and red peppers and cook for another 3-5 minutes. Then, add the rice, paprika, turmeric (for color) and mix well. Finally add the chicken broth and Clamato and cover the skillet.
Let it cook in low to medium heat for about 20-25 mins until liquid is absorbed.
In a separate pan grill your shrimp with a little cooking oil. It takes about 5-7 minutes to cook.
Incorporate the shrimp in the large skillet.
Serve and enjoy!
Tip: For larger crowds, double the recipe using an extra large skillet or paella pan.
