Description
A delicious homemade dish that goes really well with any kind of meat or just by itself. Super easy to make and great for families.
Ingredients
1 pound brussels sprouts, halved
4 ounces thick-cut pancetta, cubed
1/2 cup roasted pumpkin seeds (also called pepitas)
1/3 cup golden raisins
2 tablespoons olive oil
Drizzle of balsamic vinegar
2 lemons juiced
Salt and pepper to taste
Instructions
- Place the brussels sprouts in a ziplock bag and add the olive oil, balsamic vinegar, and lemon juice. I add a pinch of salt and pepper. Let it sit in the fridge for about 30 minutes to marinate.
- In a large pan or skillet place the pancetta and let it cook in medium/high heat for a couple of minutes.
- Place the brussels sprouts and mix them really well with the pancetta. Let it cook for another 5-7 minutes in medium/high heat. *I like my brussels sprouts a little hard but if you want them softer, cook them for an extra minute of two.
- Finally add the golden raisins and pumpkin seeds. Mix well.
- Serve warm and enjoy!
