I am so excited to share with you my latest favorite recipe: Amazing Shaved Brussels Sprout Salad. I love brussels sprouts but never tried them raw before. Raw Brussels sprouts are amazing! Make this salad even better by adding blue cheese, dried cranberries, and nuts. Healthy, fresh, and so tasty.
Do you know that if you slice Brussels sprouts they result in an unbelievably delicate slaw? All you need is a very sharp knife or a slicer. But if you don’t want to do it yourself or you are short on time, Trader Joe’s and Whole Foods sells shaved Brussels sprouts ready for your salad. And you can have an amazing shaved Brussels sprout salad ready in just a few minutes!
I am also including a very simple homemade dressing that just goes perfect with this salad recipe. All you need for the dressing is orange juice, honey, olive oil, and vinegar. It is fresh, healthy and will make your Brussels sprout salad taste incredibly good.

Amazing salad recipe made with delicious shaved Brussels Sprouts. Easy to make, healthy, and perfect for lunch or as a side dish for dinner.
Ingredients
- 1 pound Brussels sprouts
- 3/4 cup walnuts or pecans chopped
- 3/4 cup dried cranberries
- 1/2 cup crumbled blue cheese
For the dressing:
- 1/4 cup orange juice
- 1/4 cup vinegar
- 3 tablespoons olive oil
- 2 tablespoons honey or use maple syrup
Instructions
- Wash Brussels sprouts well first. Then cut each one into very thin slices using a sharp knife or slicer.
- Toss in a bowl and separate layers. It should look like a slaw.
- Add the toppings and mix well.
- For the dressing: in a measuring cup add orange juice, vinegar, oil and honey or maple syrup. Mix well and pour over salad right before serving.
