I am in the mood for tarts and casseroles. I love vegetarian dishes and thought of a great idea: making a chard and spinach tart! I found a recipe but changed the ingredients a bit and added a whole wheat crust. My tart came out great! I also added chopped hard boiled eggs. You can try it with just one veggie or add more if you prefer other veggies. I am thinking kale and shredded carrots will also go really well with this tart.
I made a delicious bechamel sauce that mixed really well with the chard, spinach and chopped eggs. After baking for about 50 minutes, the tart came out super creamy and tasty. Make sure you use organic ingredients when possible and make your meals healthier.

Ingredients
- For the Crust:
- 2 cups whole wheat flour
- 1 egg yolk
- 7 oz butter
- Salt
- For the Tart:
- About 1 pound of chard
- About 1 pound of spinach
- 2 hard boiled eggs, chopped
- 3 tablespoons butter
- 6 tablespoons whole wheat flour
- 2 cups milk
- 1 cup shredded parmesan cheese
- Salt and pepper to taste
Instructions
- For the Crust:
- Place the flour on top of parchment paper on the counter and make a hole in the middle. Place the rest of the ingredients in the middle and mix with your hands. Then wrap the dough in a plastic wrap and put it in the fridge for 30 minutes.
- For the Tart:
- Cook the chard and spinach for a few minutes then chop.
- For the Bechamel Sauce: In a small pan, melt the butter and then add flour mixing constantly. Gradually add the milk and cook until it become think. Then add the parmesan cheese and mix well. Add salt and pepper to taste.
- Take out of the heat and add the spinach, chard, chopped hard boiled eggs and a little more salt if needed.
- Oil a medium size baking tart mold and place the dough. Make sure you have enough dough for the bottom of the tart and safe some to go on top once you put the filling.
- Bake for about 40-50 minutes.
