Great treat for the entire family! I adapted this recipe from The Two Lazy Gourmet Blog. They use Nutella but I looked into a healthier alternative and found: Justin’s Chocolate Hazelnut Spread!
Nutella has more sugar than cake frosting! Not to mention it is made with GMOs and lots of preservatives. I found Justin’s Chocolate Hazelnut Spread at Whole Foods and decided to give it try. It has way less sugar and all natural ingredients. What it will taste like is a delicious combination of premium hazelnuts and organic chocolate for an addictive, skip the bread and eat it with a spoon delicacy.

Chocolate Hazelnut Sandwich Cookies
These sandwich cookies are made with only three ingredients: Nutella or if you want a healthier alternative use Justin’s spread (or any other natural chocolate hazelnut spread), egg, and flour. Perfect treat and very easy to make!
Makes about 20 cookies.
Ingredients
•1 cup Nutella or Justin’s Chocolate Hazelnut Spread
•1 extra large egg
•1 cup self-rising cake flour, plus more for dusting as needed
Instructions
1.Preheat oven to 375ºF and line a baking sheet with parchment paper.
2.In the bowl of a stand mixer or in a medium mixing bowl using a hand-held electric mixer, beat together the egg and ½ cup Nutella or Justin’s spread until well combined.
3.Slowly add the cup of cake flour until a sticky dough is formed.
4.Turn the dough out onto a very lightly floured board and knead just until it comes together enough to form into balls. Form into 18 to 20 1-inch balls, flouring your hands lightly as you go, if necessary, to keep the dough from sticking.
5.Place balls onto prepared baking sheet a couple of inches apart.
6.Bake in preheated oven for 12 minutes.
7.Remove pan from oven and slide the parchment, with the cookies on it, onto a rack to cool. Allow cookies to cool on rack for 12 minutes or so.
8.Using a serrated knife, cut a cookie in half horizontally. Spread a heaping teaspoon of Nutella or Justin’s Spread onto the bottom half of the cookie and then replace the top half of the cookie making a sandwich.
9.Repeat until all of the cookies have been filled, then allow cookies to cool completely on rack.
10.Store in an airtight container on the countertop.
