Crock Pot Chicken Tacos
Ingredients:
1 pound boneless/skinless chicken breasts
1 bottle of salsa (mild or non-spicy if serving to small kids) A good choice is Amy’s Organic Mild Salsa
Salt, pepper, paprika to taste
Tortillas (I like soft corn or whole wheat from La Tortilla Factory)
Toppings: beans, guacamole, lettuce, peppers, tomatoes, grated cheese, olives.
Instructions:
Put chicken, seasoning and salsa in crock pot. I use the Cuisinart Multi-Cooker in low for about 4 hours. The chicken can be shredded easily with a fork when done.
Serve with your favorite toppings and enjoy a fantastic family meal together!
