This fresh fruit cheesecake is a super yummy dessert! Try it with different fruits too! Berries goes really well for this recipe. I am using strawberries and blueberries this time. Adding fresh fruits will enhance the flavor of this delicious recipe.
Fresh Fruit Cheesecake
Fresh Fruit Cheesecake Crust:
2 cups ground graham crackers
1/2 teaspoon ground cinnamon
1 stick unsalted and melted butter
Fresh Fruit Cheesecake Filling:
2 (8 ounce) cream cheese blocks
3 eggs
1 cup brown sugar
1 pint sour cream
1 lemon, zested
1 dash vanilla extract
Instructions:
For the crust combine the ingredients in a mixing bowl and put it at the bottom and sides of an 8-inch pan. Refrigerate for 5 minutes.
For the filling use an electric mixer to beat cream cheese on low until smooth. Add eggs 1 at a time. Gradually add sugar and beat for another couple of minutes. Add sour cream, lemon zest, and vanilla.
Pour the filling into the crust. Set the cheesecake pan on a large piece of aluminum foil and fold up the sides around it. Place the pan in a large roasting pan.
Pour boiling water into the roasting pan until is about halfway up the sides of the cheesecake pan. The foil will keep the water from seeping into the cheesecake. Bake for 45 minutes at 325.
Chill in the refrigerator for 4 hours.
In a small saucepan add 1 cup blueberries and 1 cup strawberries with some honey and some lemon juice for 5 minutes. Let it cool and spread on cheesecake.
