Shrimp And Vegetable Couscous Paella is a very easy to make recipe! This recipe cooks in less than 15 minutes because it calls for couscous instead of rice. This delicious meal is quick enough for a busy weeknight meal, and fancy enough to serve to guests. My three year old son also enjoyed it.

Couscous is considered a pasta which is made of small granules of semolina flour, and is traditional in North African cuisine. It is also available made from whole-wheat flour, which slightly increases the fiber and boosts nutritional value.
You can also add other vegetables like red or orange peppers which always gives a very good flavor to paellas. If you want the paella to have more color add 1/2 teaspoon of ground turmeric.
Remember using fresh ingredients is always better and more nutritious, but you can also use frozen vegetables if you don’t have them available.
Shrimp and Vegetable Couscous Paella
(Serves about 3-4)
Ingredients:
- 1-2 Tablespoons Olive Oil
- 1 cup Onion, diced (about 1 medium onion)
- 3 Garlic Cloves, minced
- 3 cups Chicken Broth
- 2 cups Couscous (I used whole-wheat flour couscous)
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Dried Thyme
- 1/2 cup Peas
- 1/2 carrots chopped
- 1/2 cup Corn
- 1/2 cup Green Beans chopped
- 8-12 medium-large Shrimp, peeled and deveined
Instructions:
In a large pan, saute the shrimp with a little olive oil and paprika until shrimp turns pink (5 minutes aprox). Set aside.
In the same pan, heat a little more oil over medium-high heat. Add the onions and garlic and after a few minutes, stir in vegetables, spices and broth.
Cook for about 5-8 more minutes until the vegetables are tender.
Bring to a low boil and stir in couscous.
After you stir in the couscous, remove from heat, add the shrimp, and cover with lid or aluminum foil and let stand for 5 minutes. Fluff with fork.
