Quinoa With Veggies is a great side dish and very easy to make. If you are familiar with my blog you will see I love quinoa. It is a healthier option to eating white rice or pasta. What is Quinoa?
Quinoa, sometimes called a whole grain, is actually a seed, this leafy plant is a relative to beets, spinach and Swiss chard. Due to its delicate taste and rich amounts of protein, potassium, and other vitamins and minerals, it is quite popular. It is also a good source of fiber and is easily digested.
Quinoa With Veggies Ingredients:
(about 2-3 servings)
- 1 cup quinoa
- 2 cups chicken broth or vegetable broth
- 1/2 teaspoon coconut oil (you can use any cooking oil)
- 1/2 teaspoon turmeric
- 1/4 cup chopped red pepper
- 1/4 cup corn (I used frozen roasted corn)
- 1/4 cup currants or raisins
- Shredded mozzarella cheese (optional)
- pinch of salt
Instructions:
Bring chicken broth to a boil then add the quinoa and then the rest of the ingredients. Turn to medium heat and cook for about 13-15 minutes until liquid is absorbed. Do not overcook quinoa.
Serve hot with some shredded mozzarella cheese (optional) on top if desired. Goes really well with my Healthy Breaded Chicken Cutlets recipe!
