This ceviche recipe only requires six basic ingredients to throw together. Just a few minutes of preparation and you can have the perfect appetizer. It’s so yummy!
I am a HUGE ceviche fan. Yes, I am Peruvian and I have to love ceviche. My whole family loves it. Even my 2 year old toddler. But sometimes it is hard to make it at home. It is hard to have fresh fish fillets or seafood always available. So I decided to make a vegetarian version with the help of some wonderful mushrooms.
I am really in love with this Simple 6 Ingredient Mushroom Ceviche recipe. You taste the same traditional ceviche juice flavors but with only vegetables. This will be the perfect way for vegetarians and vegans to enjoy the true ceviche experience. Yum!
The lemon juice together with some olive oil, cilantro and garlic makes it so enjoyable and healthy. And the raw mushrooms are simply perfect. I love cooking with simple and healthy ingredients!

Great appetizer idea. Healthy and so easy to make.
Ingredients
- 1 pound mushrooms
- 2 garlic cloves minced
- 1 cup fresh lemon juice (about 6 lemons)
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- Salt to taste
- 1 aji limo-chili. chili. *optional if you like it spicy.
- Pepper to taste *optional
Instructions
- Slice the mushrooms (I sliced each one in 4) and place them in a medium/large bowl.
- Add the garlic, chili, salt, pepper, and cilantro. Mix well. If using the chili make sure it is deseeded and deveined, then finely chopped.
- Pour the lemon juice and olive oil. Mix everything together.
- Serve right away cold.
