Vegetarian Zucchini Boats
You will love these zucchini boats as an appetizer or even a side dish. Instead of regular bread sticks, serve these zucchini boats and ditch the carbs. They are also a great alternative to pizza. Melted cheese, fresh tomatoes, basil and tasty zucchini.
Zucchini is one of my favorite vegetables and it is also full of health benefits. You can eat more vegetables by making creative and healthy recipes. You will be surprised to know how easy it is to make these boats and how delicious they taste. The best part is the entire family can enjoy them.
If you don’t want them completely vegetarian they will also go well with some pepperoni or sausage as additional toppings. Serve them for dinner, at a party, or even as a healthy snack. They are really easy to make and you won’t be making a mess because they go right into the oven.

Description
A healthy and super easy to make recipe that can be a great appetizer, side dish or snack.
Ingredients
- 2 large zucchinis
- 2 large tomatoes
- 1 cup mozzarella cheese
- 1/4 cup grated parmesan cheese
- 10 basil leaves chopped
- 2 garlic cloves minced
- Olive oil, salt and pepper to taste
Instructions
1.- Just cut a zucchini in half lengthwise and trim a little off the bottom
2.- Scoop out the center where the seeds are with a spoon
3.- Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper to your taste
4.- Arrange halved grape tomatoes into the grooves, sprinkle with some mozzarella and bake in a 375degree oven for about 20-25 minutes.
5.- Remove and drizzle with olive oil and a sprinkling of grated parmesan and basil.
Notes
Great appetizer that goes really well with Italian meals. Serve them with my spaghetti carbonara with quinoa pasta recipe and have a super healthy meal for the entire family to enjoy.
